Our snowmobile club provided lunch as a fundraiser for our local Chamber of Commerce last week. I wanted to include a dessert as part of the lunch and came across a Chocolate Strawberry Shortcake Cupcake recipe on Chef Chloe's website. What can I say but delicious! And they are vegan which pleased a couple of the chamber members. But don't let the vegan label scare you - these are not made with eggs or any animal-based dairy products but you'd never know it. This recipe was the first vegan recipe to win on the Food Network's Cupcake Wars show. Try 'em, you'll like 'em!
